Cod Liver Oil has been part of the Norwegian diet for centuries. It has been a key component, especially during times of limited food supply. Today, one out of three Norwegians take cod liver oil every day.
Initial Norwegian Medical Standard
The Norwegian Medical Standard for cod liver oil was written more than one hundred years ago. Due to harsh weather and seasonal movement of the fish, there were times when cod liver oil was in short supply. As a result, other fish were used in place of cod and have therefore been included in the Norwegian Medical Standard. This means that, even today, products labeled as cod liver oil may not be made from cod liver.Modern Norwegian Medical Standard
The original Norwegian Medical Standard for cod liver oil has been revised numerous times to include freshness and purity requirements. While the best source for cod liver oil is Artic Cod (due to rich Omega-3 and vitamin levels, as well as purity), the Norwegian Medical Standard still allows Seit (white fish) and Haddock to be used as cod liver oil source substitutes.Today's Cod Liver Oil
As the Norwegian Medical Standard allows for other fish species to be used, very few cod liver oil products on the market are made exclusively from Artic Cod. Seit and Haddock contain very limited amounts of vitamin A or D. As a result, synthetic vitamins are added to most cod liver oil products to "standardize" the oil.Raw Material Sources
Seit and Haddock are used extensively for animal protein production, and the by-product oil is commonly sold as cod liver oil. The harsh processing (which includes grinding and prolonged heat) challenges the freshness and integrity of the oil.Standards for Exceptional Cod Liver Oil Quality

The best raw material for cod liver oil is Arctic Cod. It contains the highest DHA and EPA levels, and naturally occurring vitamin A and D. Artic Cod is not endangered and is caught in waters that are not over fished.Freshness
The Norwegian Medical Standard limits peroxide value to 10 meq/kg, as higher amouns indicate high oxidation levels and subsequent free radical formation in the body. Leading cod liver oil manufacturers deliver a peroxide value 2.0 meg/kg. The best indicators of exceptional freshness are the absence of repeat or burping, and pleasant, fresh-smelling and tasting oil.Heavy Metals
While the Norwegian Medical Standard limits heavy metals in cod liver oil to 0.1 ppm (100 ppb), leading quality cod liver oil products show no detection at ppb.Dioxins and PCBs
The Norwegian Medical Standard limits dioxins to 2.0 ppt and PCBs to 3.0 ppt. Leading quality cod liver oil products show no detection for over 210 dioxins, as well as mono and ortho PCBs at 0.5 ppt.Refining
